Raw chocolate temptation.

It has been a while since I wrote last. Been busy studying, working my ass off in the gym (and loving it) and working. Been doing not so great with the raw diet lately, meaning that I have fallen for the temptation of eating pasta, bread and other stuff that tastes delicious while eating them but doesn't really make me feel that grate in the long run (or even 5 minutes after).

Fortunately enough a good friend of mine who is raw and has been for a long time came to town for a few days and he really inspired me to get back on track with my raw diet. We made the most delicious chocolate cake together one evening and I wanted to share the recipe with you guys. You have to try it out, it is AMAZING!!! And the best thing of all, it is super nutritious and you feel great and full of energy after eating it.

Pontus chocolate temptation:

Top layer, Mango cream:
One Mango
Vanilla powder
Mix it together.

Mid layer, chocolate mousse:
Honey
One big avocado or two small
Vanilla powder
Coconut oil
Mix it all together with a hand mixer.

Bottom layer, nut curst:
8 Dates
About 200 g nuts, brazilian nuts and almonds (or use the kind you like the most)
Vanilla powder
Some cacao nibs (added at the end after mixing the rest of the ingredients together)
Mix it together in food processor(preferably)

Then you just spread out the bottom layer on a plate or in a baking tin, spread the mousse on top and put it in the fridge for at least one hour. Put the mango mousse on top before serving. I also sprinkled some pomegranate seeds on top to make it extra yummie.

As you can see all the measurements are not there and I'm not even sure that the ones I did put
there are a 100% correct but just try it out. It will taste amazing!!!

Enjoy and thank you again Pontus for this recipe.

Have an amazing weekend everyone.
Love
Maria
